Chocolate and pear log for Christmas

Ingredients

  • 1 genoese
  • 200g of black chocolate
  • 6 Pears in syrup
  • 2 eggs
  • The syrup of the pears
  • Some Icing sugar
  • Chocolate Chips

Preparation

Begin by melting the chocolate in the water-bath, and during that time cut pears the most finely possible.

Once the chocolate has melted remove from heat and add the egg yolks and 4 tablespoons of pear syrup. Stir.

Once the cake is cooked imbibe it immediately in pear syrup, spread the chocolate ganache and place on top of the chips pears.

 mash up Pears to avoid hindering the rolling

Roll your log .

Decorate it with Icing sugar and chocolate chips . Keep it in the freezer for 12 hours .
